Optionally, butter the sides of the cake pan.","Melt the butter and chocolate together until smooth and well-combined. The easiest way to do this is in the microwave: Put the chocolate and butter in a microwave-safe bowl or glass measuring pitcher and heat it for 30–60 seconds at a time, stirring each time, until it is nearly all melted. Let it sit for a few minutes so the residual heat will finish melting the chocolate, then give it a final stir.","Put the sugar and eggs in a large mixing bowl. Briefly whisk the sugar and eggs together.","Drizzle the melted chocolate mixture into the sugar–egg mixture, whisking until the batter is smooth in texture and uniform in appearance. The goal of whisking is to combine the ingredients thoroughly, but not to beat air into the cake batter.","Pour the batter into the prepared cake pan, then cover the cake pan with a piece of aluminum foil.","Place the foil-covered pan in a larger, oven-proof pan. Carefully pour very hot water (can be boiling) into the larger pan, so that the foil-covered cake pan is sitting in a hot water bath (called a bain marie in French). The water should be an inch (2.5 cm) deep, or approximately halfway up the side of the foil-covered cake pan. Don't pour the hot water on top of the foil or so high that it might get inside the cake pan.","Carefully put the whole bain-marie assembly in the preheated oven. Bake for about 75–90 minutes, until the cake is set and the surface is nearly dry. To test, remove the cake and its water bath from the oven, and remove the aluminum foil from the top. The surface will be pocked by little craters like an asteroid, which is the source of its name—don't worry, as they'll be covered before serving. The middle of the cake shouldn't jiggle when the cake pan is moved, and when you lightly touch the surface, your finger should come away nearly clean. If it needs just a few more minutes, it's okay to put the cake back in the oven without re-covering it. However, if you think it will need more than about 10 more minutes, re-cover it with the foil and put the whole water bath assembly back in the oven.","When it is done, remove the cake pan from the water bath and remove the foil. Cool the cake in the pan on the counter or a wire cooling rack until it is safe to cover it with plastic wrap and put it in the refrigerator. A large rubber band can help secure the plastic wrap, if needed. Chill the cake in the refrigerator for at least 3 hours (and up to overnight) until firmly set.","To serve, first let the cake warm up to room temperature for about 30 minutes. Slide a dull knife around the edge of the cake pan to loosen the sides. Flip the cake upside down onto a large plate or serving platter.
